Vacuum freeze drying is the process of water sublimation in food at low temperature and pressure, thereby preserving up to 95% of nutrients and flavors, maintaining the original color and shape. Additionally, the drying process can remove about 90% to 95% of moisture, helping to preserve food for a long time at room temperature and making it easy to transport due to its lightweight.
As part of the Technology Transfer Platform’s activities in 2024, Center for Statistics and Science and Technology Information of Ho Chi Minh City (CESTI) - in collaboration with Bear Food Technology Company Limited - is organizing a seminar on "Vacuum Freeze Drying System in Food Processing and Production".
Vacuum freeze drying is a process of water sublimation in food at low temperature and pressure. The water in the food is frozen in a vacuum environment with reduced pressure to a certain value, which corresponds to the boiling point depression, and will be directly sublimated to the gas phase without passing through the liquid state. As a result, food is freeze-dried at very low temperatures, preserving up to 95% of nutrients and flavors, maintaining the original color and shape. Additionally, the drying process can remove about 90% to 95% of moisture, helping to preserve food for a long time at room temperature and making it easy to transport due to its lightweight.
At the event, Bear Food Technology Company Limited will provide detailed introductions on the system, its structure, operation, and production processes of some products in food processing such as fruits, cordyceps, animal feed, and spices. The system is designed according to customer needs, with equipment quality meeting the EU's GMP and FDA standards. The seminar aims to introduce solutions and equipment to departments, institutes, manufacturing plants, food processing, pharmaceutical, and cosmetic industries.
